As part of our work on our green flag for Global Citizenship Food and Biodiversity, Kilcornan green schools' committee held a 'Harvest' and 'Cooking' day .
Promoting local and home grown produce and reducing food miles and food waste are topics that pupils have been studying in school. For 'Harvest Day', pupils brought in a variety of home grown produce in order to raise awareness about the importance of reducing food miles, helping the environment and the endless possibilities of working with fresh local and seasonal ingredients. All classes got to visit the display and see the amazing local ingredients that we are capable of producing. The display included local honey from pupils' hives, eggs from pupils' hens, wild garlic, rhubarb, home made jam, lettuce, onions, kale and brussells sprouts to name a few.
Following the harvest collection and display, pupils researched receipes that could be made using the ingredients. The following day was spent cooking and baking using the ingredients for a school feast fit for kings! A massive well done to Ms. Mullane and her sixth class for co ordinating the harvest day and cooking day. Pupils used the cooking kit we received from An Taisce to make salads, garlic butter, egg muffins and mini pizzas as well as creating recipes using locally produced granola, sausages and rashers.
Thank you to the whole school community for their involvment in these two action days. The lessons that pupils have learned about reducing food miles and promoting local and seasonal produce have been invaluable and ones that pupils will take with them and put into action in their own lives.
